Mini Funnel Cakes

Happy Weekend! It’s fair season around here and that makes me crave fair food in the worst way. Give me all the turkey legs, lemonade and funnel cakes. Luckily, I found a recipe to allow me to indulge without actually having to go to any fair this summer. Pro Tip: They don’t mention it but you can tell from the pictures that you have to cut the squeeze bottle to make for a thicker pour. And if you want to […]

Southwest Salad

These are leftovers y’all. From our previous nights dinner, grilled chicken with avocado salsa. Both options are so, so good. For the leftover salad, I chopped the chicken and topped green leaf lettuce with the avocado salsa, black olives, mozzarella cheese, and tortilla salad strips. You could add corn, salsa, sour cream, a southwest ranch, etc. If you omit the tortilla strips, this meal remains keto. I just couldn’t resist. I love meals that are so versatile, and still healthy, […]

Banana Bread & Muffins

Super ripe bananas have always meant banana bread is coming soon. So when I got home from work today and saw mine were on the border line, I figured why not bake up a batch. My lack of patience led to an awesome discovery! The bake time is an hour and 15 minutes for a loaf. I find muffins are a much easier way to grab breakfast in the mornings so I scooped the batter into a dozen of those. […]

Chicken Kabobs with Super Fresh Salad

We’ve been using the heck out of our grill and I have to say, I’m obsessed. We made these “Mediterranean chicken kabobs” the other night and they were delish. We used green bell peppers, zucchini and red onion and ended up marinating them for 24 hours which lead to SO much flavor. Click for kabob recipe; https://www.themediterraneandish.com/mediterranean-grilled-chicken-kabobs-tahini-sauce/ For the side, we made this “super fresh cucumber salad”, which also marinated for 24 hours but didn’t have as much flavor so […]

Cake Mix & Frosting Hacks

I’ll never pass up an opportunity to eat cake. So when my husband brought home yellow cake mix and vanilla frosting from our store this weekend, I went to work. But Google helped me make this one of the best cakes we’ve made *from a mix*. For the mix hack, I substituted the water for whole milk. Same amount, just good, cold milk. And because we have an abundance of eggs from our chickens that we can’t sell in our […]

French Toast Recipe

There’s nothing better than starting my morning cooking breakfast with my husband before going out to feed the animals in this polar vortex. Especially something as comforting as this french toast recipe that my dad made us countless weekend mornings growing up. My favorite ingredient has to be the orange zest. Such a simple addition that makes a world of difference. Ingredients 2 large eggs 1 tbl milk 1 tsp cinnamon 1/2 tsp vanilla 1 tsp sugar (opt) 1 orange […]

Healthy Start

Starting my Sunday off right with this breakfast as part of my new low sugar, low carb “diet”. I hate to call it a diet because this is more a lifestyle adjustment that hopefully sticks. I’ve been loving the results so far and getting to eat something as yummy and filling as this makes it that much easier to follow. Ingredients 1/2 cup plain, whole fat yogurt 1/2 cup strawberries, sliced 1/2 banana, sliced drizzle of honey Layer ingredients in […]

Intermittent Fasting

In my seemingly endless TTC journey, I’ve tried just about everything the internet and/or Pinterest had to offer. But in my quest to lose weight and get to a healthier BMI, intermittent fasting was something I was certain I couldn’t do. But I went for it and could not be happier that I did! It’s a surprisingly smooth adjustment. And works. I lost 11 pounds and did not feel deprived at all. I also focused on limiting, no necessarily eliminating […]
